When British bartender Dick Bradsell created the Bramble cocktail in the mid-1980s, he was inspired by memories of picking blueberries as a young boy. When the bartenders at Úplně Všude created the Pink Bramble drink, they were inspired by the original recipe but took the liberty of adding something new to this old cocktail classic - Hedgehog Pink Gin with its subtle flavours of blueberries, blackcurrants, coriander and cinnamon. And blackcurrant liqueur too, because you can never have enough pink!  

Combining a time-honoured recipe with a dash of something fresh, the result is a drink that's perfect for a modern designer wedding or a stylish farmhouse fete. After all, whatever your preferred venue for your day, Úplně Všude Catering is happy to go along for the ride.  

PINK BRAMBLE  

  40ml of Hedgehog Pink Gin (buy the best at Premier Wines & Spirits 

  20 ml lemon juice  

  10 ml thyme syrup  

  10 ml Crème de cassis (blackcurrant liqueur)  

  a slice of lemon and a sprig of thyme for garnish 

Fill an old fashioned glass with the splash, measure out the Hedgehog Pink Gin, lemon juice, thyme syrup and stir with a spoon. The shatter will loosen a little, sit more flat in the glass and thin the liquid slightly. Then top up the glass with the splinter. Measure out the blackcurrant liqueur and pour it over the top of the splinter. Do not stir! The liqueur will find its own way to where it's supposed to go, and you'll get a beautiful colour gradient. Garnish with a slice of lemon and a sprig of thyme.  

TIP! You can make ice cream in seconds at home without a special maker - just a kitchen board, a tea towel and a meat mallet. Wrap the ice cubes in a cloth towel and beat until the cubes become a splinter.  

 THYME SYRUP 

500 g crystal sugar   

400 ml water  

20 g fresh thyme  

Heat the water and dissolve the sugar in it. Bring to the boil, remove from the heat and add the thyme. Leave to macerate for about 10 minutes. Filter through a sieve.
